Livestock statistics on geographical distribution reveals that about 97 per cent of world’s buffalo are found in Asia and further 75 per cent of the same in South Asia. India accounts for almost 60 per cent of the world’s buffalo population.

Cooking tips
Buffalo meat is very lean and does not marble like beef. In beef, fat acts like an insulator in the cooking process. Therefore, buffalo must generally be cooked at a lower temperature and/or for less time. Buffalo meat has a tendency to continue to cook even when it has been removed from heat.
